Among Greek cheeses, Feta PDO holds the most prominent place, as the flagship of designations of origin in Greece. It is a traditional, soft cheese made from sheep and goat’s milk. It is a type of white cheese preserved in brine, shaped into blocks, with small or no holes, and can be cut into slices or cubes. The main sensory feature of Feta PDO is that of a salty, mildly sour taste, with a characteristic aroma. It has a compact touch and is slightly grainy in texture. The original character of the cheese relates to a number of complex factors, such as the breed of the sheep and goats, the climate, terrain, flora of the area and the experience of the cheese-makers, as it has accumulated over the centuries and passed on from one generation to the next. It contains no antibiotics, artificial colourings, preservatives or genetically modified organisms. Remarkable, used as a table cheese, in salads, such as Greek salad, in baking (‘spanakopita’ or cheese-pie), or served with olive oil and olives. It can be sprinkled with herbs and served with various dishes.
