Manouri is a milk-whey cheese. It is produced exclusively in the regions of Thessaly and central/western Macedonia, from sheep or goat milk whey or their mixtures, to which sheep or goat’s milk or cream can be added. It is available in different dimensions and weights, in cylinders, with a compact structure, no holes and white in colour. It is a particular whey cheese, with a soft structure and creamy texture. It has a pleasant, sweet flavour, combined with a rich aroma. Manouri contains no antibiotics, artificial colourings, additives, or genetically modified organisms. It is a dairy product that is mainly served as a table cheese and is considered ideal for the preparation of appetizers. It is also widely used in a variety of hot or cold, sweet or savoury dishes and in desserts.
