A traditional, soft cheese made from cow’s milk. It is a type of white cheese preserved in brine, shaped into blocks, with small or no holes, and can be cut into slices. The main sensory feature of this White Cheese is that of a salty, slightly sour taste, with a characteristic aroma. It has a compact touch and is slightly grainy in texture. It contains no antibiotics, artificial colourings, preservatives or genetically modified organisms. Remarkable, used as a table cheese, in salads, such as Greek salad, in baking (‘spanakopita’ or cheese-pie), or in dishes with meat or pasta. It can also be sprinkled with herbs, such as oregano.
